<div>1 tablespoon olive oil<br />
1 cup chopped onions<br />
3/4  cup chopped carrots<br />
3 cloves garlic, minced<br />
1 cup chopped green bell  pepper<br />
1 cup chopped red bell pepper<br />
3/4 cup chopped celery<br />
1  tablespoon chili powder<br />
1 1/2 cups chopped fresh mushrooms<br />
1 (28 ounce)  can whole peeled tomatoes with liquid, chopped<br />
1 (19 ounce) can kidney beans  with liquid<br />
1 (11 ounce) can whole kernel corn, undrained<br />
1 tablespoon  ground cumin<br />
1 1/2 teaspoons dried oregano<br />
1 1/2 teaspoons dried  basil</div>
<div>Directions<br />
Heat oil in a Moneta Ceramica  non-stick saucepan over medium heat. Saute  onions, carrots, and garlic until tender. Stir in green pepper, red pepper,  celery, and chili powder. Cook until vegetables are tender, about 6 minutes.<br />
Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and  corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to  medium. Cover, and simmer for 20 minutes, stirring occasionally.</div>

<p>Here is a great video from one of our very enthusiastic customers of Moneta Ceramica (the only certified green pan and green cookware).  If you would like to make this great Frittata in your kitchen, you will need 2 items:</p>
<p>Item 1: A Ceramica Frypan or Skillet (You will have to buy one on our site. www.gocookware.com</p>
<p>Item 2: A recipe for an authentic Frittata.  (we will supply Free of Charge-See below)</p>
<p><strong>Tuscan Sweet Onion Frittata</strong>- Frittata Di Cipolle</p>
<p>4 -Tablespoons of Extra Virgin Oilve Oil</p>
<p>4- Large Yellow Onions or Red Spanish Onions</p>
<p>1/2 Cup-dry white wile</p>
<p>4-Eggs lightly beaten</p>
<p>salt and freshly ground pepper</p>
<p>1. Thinly slice the onions (about 1/8&#8243;) and place them in a 1o or 11&#8243; Frypan or Skillet MUST BE A CERAMICA or Non-Stick.</p>
<p>2. Add 3 Tbsps. of the Olive oil and pour over the onions, then stir with wooden spoon to coat evenly.</p>
<p>3. Place the heat on a 2 or 3 (very low) and cover.</p>
<p>4. Stir occasionally for about 30 minutes, until they are STRAW yellow- NOTE: DO NOT BROWN OR BURN ONIONS. When the straw color appears the onions are sweet (caramelized).</p>
<p>5. Lightly beat the eggs in a separate bowl, adding a pinch of salt and pepper..</p>
<p>6. Pour the eggs into the onions and raise heat to 4. Stir and then using a circular motion, and cook about 2 minutes.</p>
<p>7. Reduce the heat to 2, cover and cook until the eggs are set, about 5 minutes.</p>
<p>8. Invert the the frittata, browned side up   into a  plate or the cover.</p>
<p>9. Add the 1 Tbsp of oil into pan and slide the frittata (browned side up).</p>
<p>10. Cook, uncovered until the second side is golden, but the center is still moist. (no more than 2 minutes)</p>
<p>Slide the Frittata on to a platter and serve hot, warm or at room temperature.</p>
<p>Variations: Serve with a freshly made Marinara sauce, and fleck with fresh Basil leaves.</p>
<p>Note: There are numerous variations of Frittata. Why ? Because, you can unleash your imagination and add any salamis, cooked veggies such as asparagus, zucchini, eggplant or green and  black olives</p>
<p>Also, you can take leftover spaghetti, mix with one egg, then follow recipe above, but you will end up with a light crust on the bottom of the spaghetti&#8230;.DELICIOUS!</p>

<li>Mix all ingredients in a bowl.</li>

<li>Heat a Moneta CERAMICA Fry Pan or Skillet  to a Low-Medium heat-No oil or butter should be used.</li>
<li>Take one Tablespoon  Cheese mixture and continue  to make piles 1/8&#8243; high and space about a 1/2&#8243; apart in the pan.</li>
<li>Using a spatula, press down on each pile, making a thin like pancake</li>
<li>When the bottom is light to medium brown, (3-5 minutes), flip with spatula, until 2nd side is brown.</li>
<li>With spatula, remove from pan and serve after a few minutes of cooling.</li>
</ul>
<p>Suggestion: Great with cooled Proseco, Chardonnay and you can vary the herbs,try Basil, Parsley. Add a topping like cream cheese, chopped tomatoes, Olive Tapenade&#8230;etc.</p>
