Frico-Easy Cheese Appetizer Time Needed: 15 Minutes

Ingredients: Makes about 16 -2 to 3″ rounds

1/4-Lb.-Parmigiano-Reggiano -grated cheese

1-Tbsp.-Fresh Rosemary Chopped or 1/2 Tbsp.-Dried

1-Tsp.-All purpose flour

Ready to go:

  • Mix all ingredients in a bowl.
  • Heat a Moneta CERAMICA Fry Pan or Skillet  to a Low-Medium heat-No oil or butter should be used.
  • Take one Tablespoon  Cheese mixture and continue  to make piles 1/8″ high and space about a 1/2″ apart in the pan.
  • Using a spatula, press down on each pile, making a thin like pancake
  • When the bottom is light to medium brown, (3-5 minutes), flip with spatula, until 2nd side is brown.
  • With spatula, remove from pan and serve after a few minutes of cooling.

Suggestion: Great with cooled Proseco, Chardonnay and you can vary the herbs,try Basil, Parsley. Add a topping like cream cheese, chopped tomatoes, Olive Tapenade…etc.
