Marylou’s Frittata alla Moneta

Here is a great video from one of our very enthusiastic customers of Moneta Ceramica (the only certified green pan and green cookware).  If you would like to make this great Frittata in your kitchen, you will need 2 items:

Item 1: A Ceramica Frypan or Skillet (You will have to buy one on our site. www.gocookware.com

Item 2: A recipe for an authentic Frittata.  (we will supply Free of Charge-See below)

Tuscan Sweet Onion Frittata- Frittata Di Cipolle

4 -Tablespoons of Extra Virgin Oilve Oil

4- Large Yellow Onions or Red Spanish Onions

1/2 Cup-dry white wile

4-Eggs lightly beaten

salt and freshly ground pepper

1. Thinly slice the onions (about 1/8″) and place them in a 1o or 11″ Frypan or Skillet MUST BE A CERAMICA or Non-Stick.

2. Add 3 Tbsps. of the Olive oil and pour over the onions, then stir with wooden spoon to coat evenly.

3. Place the heat on a 2 or 3 (very low) and cover.

4. Stir occasionally for about 30 minutes, until they are STRAW yellow- NOTE: DO NOT BROWN OR BURN ONIONS. When the straw color appears the onions are sweet (caramelized).

5. Lightly beat the eggs in a separate bowl, adding a pinch of salt and pepper..

6. Pour the eggs into the onions and raise heat to 4. Stir and then using a circular motion, and cook about 2 minutes.

7. Reduce the heat to 2, cover and cook until the eggs are set, about 5 minutes.

8. Invert the the frittata, browned side up   into a  plate or the cover.

9. Add the 1 Tbsp of oil into pan and slide the frittata (browned side up).

10. Cook, uncovered until the second side is golden, but the center is still moist. (no more than 2 minutes)

Slide the Frittata on to a platter and serve hot, warm or at room temperature.

Variations: Serve with a freshly made Marinara sauce, and fleck with fresh Basil leaves.

Note: There are numerous variations of Frittata. Why ? Because, you can unleash your imagination and add any salamis, cooked veggies such as asparagus, zucchini, eggplant or green and  black olives

Also, you can take leftover spaghetti, mix with one egg, then follow recipe above, but you will end up with a light crust on the bottom of the spaghetti….DELICIOUS!
